Throughout his life, Michel Bras, an emblematic figure in the world of cuisine, has transformed constraints into freedom. As he retraces his career, made up of a series of wanderings and byways, and faced with a heap of photos, archives and memories, he has chosen seven verbs as his guideposts: listen, learn, love, dream, cook, doubt, share.Under the pen of Corinne Pradier
"I'm a self-taught man. This book is a book of hope. Gi and I started from nothing. We built ourselves day by day, open to the world, to culture, to the economy, to others... Our life is made up of many failures. These were Michel Bras' first words at the start of our talks at Lagardelle. The ascent from Lou Mazuc to Le Suquet, a distance of seven kilometres, brilliant as it was, was littered with trials and tribulations. There was no sign of such a destiny, and it was through "wandering and bushwalking" that the path was mapped out.
The book is brought to life by 7 picture books that interact with the 7 chapters. Anne Bullat-Piscaglia and Guillaume Bullat (Voiture 14 studio), who are responsible for the book's graphic design, have plunged into the depths of Michel Bras's archives to tell the story of his personal journey, using personal photographs and previously unpublished documents, along with testimonials from his close collaborators and friends.
The cover of the book is wrapped in a 680 x 480 mm fold-out American dust jacket depicting Michel Bras' intimate map of Aubrac. He points out the 46 places that have marked his life: "Am I not Aubrac in reality? It is Aubrac, this corner of the world, that has shaped me".
