Unique cuvées, grape varieties to explore, stories to share. La Halle aux grains invites you to enter the world of our Grains cuvées, unique wines served exclusively at the restaurant, through a tasting guided by our sommelier. Each cuvée tells a story: that of a sometimes lesser-known or forgotten grape variety, a winemaker, a terroir and a distinctive savoir-faire. As the tasting unfolds, let yourself be guided through the origins of these wines, the people who shape them and what gives each one its own identity. Whether you are simply curious, a beginner or a seasoned wine enthusiast, the workshop is designed to be an accessible, convivial and generous experience, centred around exchange and sharing. The tasting includes 6 glasses of wine, each paired with either aged cheese or a sweet bite, carefully chosen to reveal each cuvée in a different way. The tasting takes place in the exceptional setting of La Halle aux grains, in the heart of the Bourse de Commerce, with a privileged view over Paris and Saint-Eustache Church. An intimate and warm moment where wine, gastronomy, stories and the pleasure of being together come together. At the end of the workshop, the wines tasted are also available for purchase, allowing you to extend the experience and share your favourites with others.

To celebrate the bicentenary of the invention of photography, and in connection with the Remember Me exhibition at the Bourse de Commerce – Pinault Collection, our pastry chef Jean-Julien Freydt revisits the flavours of the early 19th century through a limited-edition creation: Roasted Apple 1826.

Inspired by recipes from that era, this dessert brings the apple back into the spotlight. Slowly roasted in brown butter, it is served with crispy barley bread, candied fruits and a delicate orange blossom ice cream.

A meeting of history, art and gastronomy, where flavours from the past take on a contemporary dimension. Each bite reveals a subtle balance between tradition, indulgence and creativity.

More than a dessert, Roasted Apple 1826 is an invitation to travel back in time and extend the cultural experience of the Bourse de Commerce to the dining table.

Our pastry chef reimagines traditional French gingerbread (pain d’épices) through a unique creation made with rye, honey and a delicate infusion of spices.

Far from classic gingerbread, this recipe stands out for its exceptionally soft, moist, cake-like texture. Candied fruits from Corsica bring fragrant, fruity notes, while cinnamon and star anise awaken memories of the festive season.
